There is no doubt that food and drink fermentation has seen a big resurgence in recent years.

There are all sorts of extravagant claims about what benefits fermented foods can bestow and sometimes it's good to just step back and look at some of the scientific evidence to give some credibility to the claims.

The Health Benefits of Fermented Foods

The major conclusion to draw from it is that you cannot lump all fermented foods / drinks into a single category and make across the board claims about them.  What does seem to be apparent that some fermented foods can have positive benefits for people who suffer from osteoporosis and diabetes, and that fermented foods are a source of beneficial probiotics.

With that in mind, have you seen how easy it is to ferment food at home?  In most cases it is simply a matter of cutting up your vegetables, adding some salt and/or water, putting it in a fermenting vessel and letting Nature and time do its magic!
