Lipase is an enzyme added to milk to add picquant flavour to cheeses and should be used if you have pasteurised milk, if you are using cow milk for cheeses traditionally made with goat or sheep milk such as fetta cheese, and for stronger cheese flavour.  Rennet is an important coagulant in cheese making and comes in both liquid and tablet form.  We stock vegetarian rennet and calf rennet.
