Fermenting Crocks
Many people prefer to use larger fermenting crocks for continuous fermenting or large batches of sauerkraut.  Fermenting crocks have a water moat around the lid of the crock which allows fermenting gases to bubble out but prevents harmful oxygen and enzymes from getting in and so potentially spoiling the fermenting products.  The food inside the crock is submerged using 2 large stone weights.
All our crocks are imported and are free of potentially harmful chemicals such as mercury and cadmium which can be present in some glazes.
